The G3 has detected that the monitor is disconnected - I'm actually
surprised that you get any screen at all. What you need to do is make a
dummy plug that will fool the G3 into thinking that a monitor is connected.

I suggest that the best way is to use the 'old mac' sensing system that
uses the larger 15pin (2row) D connector (IIRC the G# comes with a VGA
connector and an adapter for older Mac monitors).

Link the following pins :

Mode           Link
13" (640x480)  pin 4 to Gnd
21" (1024x768) pin 10 to Gnd
These give a fixed resolution, Gnd is Pin 11 (amongst others).

For multisync, link pins 10 and 7 :
Directly (wire) gives 13", up to 832x624
With a diode (10 -|<|- 7) gives 17", up to 1024x768
With a diode (10 -|>|- 7) gives 21", up to 1152x870

For multisync monitors, the default is to select the highest resolution
when first connected, but after that it will remember the user setting.
