It seems odd that the photo shows up one day and not the next, then shows up again today. I understand the person in question would have a Address book card because of the line of work they do. 
Also as I mentioned I don't actually have this person in my address book as they are a member of WAMUG and it would be unnecessary

I believe that providing the person sending the email has chosen a personal Address Book card using menu item Card => Make This My Card, then if there is a photo on that card it will show up on email for the recipients in Lion Mail.app. If you have an Address Book card for the sender, then the photo on that card will override the photo for their personal Address Book card.

One strange occurrence though was in mail when I was checking on sunday one of the WAMUG members photo was appearing in the top right hand corner of their email to the list.
