Oh dear what have I done?!!

The IP address on the Airport Extreme when I check in Airport Utility is 
different to the address shown under Network? And the iPad IP Address is 
different to both of them?!!

On your iPad Go to Settings > Wi-Fi & select the correct 5GHz Network.

It should then connect to that Network in the future.
