Hi Peter (and Stephen).

Mojave still uses iTunes.
Music didn’t come into it, until Catalina (10.15).

To backup your device in Catalina, you now do it in the Finder.
When you plug in your phone to the computer, open a Finder window (or just 
click anything to open a window). The iPhone will be listed in the sidebar now. 
And from there you can access the settings and do a backup.
