There may be some quirky edges, but I will keep this in mind. Yes, gzip can be turned off. Well, it's not necessary to turn it off. Every time you modify your original css, js, a versioned file is made, and a gzipped file of the versioned file is also made, it's a one-time gzip. Turning it off just means serving the versioned file as suppose to the gzipped one.
