I can't even select 1.6 since I am on Leopard!

Eclipse, it will start with the default system vm. You may be able
to force eclipse to start up using a vm other than the default. A
quick trip to google showed this site but I make no promise as to

It seems to indicate java 1.6. My eclipse setting is 1.5 though!

Nothing we do requires 1.6. You should be fine running Eclipse 3.5
on any platform.
