Client-side encryption will prevent an anti-virus software/system from parsing the message and its attachments, as you've mentioned, unless you've done something complicated, like decrypt and re-encrypt as it travels out of your network.

Gateway (server-side) encryption will *not* prevent anti-virus, anti-spam, archiving, etc. from parsing the message and its attachments, as the message travels in cleartext (unencrypted) until it gets to the edge of your mail system, and is then encrypted for travel across the Internet.
