Hi Robin. It's normal for a mail to be sent on creation of a page you are watching. The most common reason for a not-yet-existing page to be on your watchlist is that it was deleted after you started watching it. Although it is possible to choose to watch pages that don't exist yet (just click the "watch" link at the title you want to watch)
However, in this case the summary given in the mail does match the deletion summary. We are planning to add deletions and moves to the watchlist triggers - it's silly that a page you care about and are watching can be deleted without your knowledge! But this isn't live yet... in fact I just checked with the guy working on this and it's not even coded yet. I've done some tests, and can't reproduce this... So please can everyone look out for this and let me know if you see it happen? When it happens by design, the email will clearly say that the watched page was deleted... so you should be able to see if it's this strangeness or the new feature.
