I'd add wmnd to control network interfaces.) If some default set is

Everybody has their own preferences and that's OK.

But what really makes me sad about the default minimalistic approach
is that it makes it harder for other people to try wmaker.

This does not oppose to that. Using Suggests instead of Requires installs the default configuration the same way, but unlike Requires it allows avoiding to install stuff that one doesn't need for those who know what they prefer.

I see people saying "yeah, ok, it's a nice and clean interface and
I like it, but the easiness to mount my external media makes me go
back to GNOME".

This is really a problem but I think wmudmount does not solve it completely either (and anyhing else not using udev/udisks is obsolete). With wmudmount it takes one click to mount and two clicks to remove a USB drive instead of mounting happening automatically and removing with one click like in Xfce/GNOME/KDE. So even if you include such a dock app by default people could say it's still easier in in GNOME and use that instead.

And that just makes me sad, because distros could be more useful
in setting up a decent wmaker for a decent user experience. Stuborn
and hacky people will always find their way to enlightenment, but
others give up.

Another idea would be, instead of trying to come up with one set of dockapps to fit everybody's needs, to make it simple to install and start dockapps and allow users to dock them easily to customise their environments (a bit like extensions in Firefox). This could be as simple as having some dockapps packaged and installed via Suggests and having a menu from where they can be started and if the user likes them they can dock them. This allows customisation and avoids the "one size fits all" problem. (This menu and the way to use the dock and clip could be hinted in an info panel to make it easier for new users.)
