I have used virt-install to install W2K3
Then took a dumpxml, modified it to customize the cdrom to point the 2nd 
dvd iso img.
Started up using virt-install create <dumpxml file>
Finished installation using 2nd dvd iso

PS: I had to do the same as Boris has suggested below for the 1st reboot.
