In that case you want to remove the old server as MX and setup the new server as the primary MX, but the config should be as backup MX. When no more mail is going to the old server (within 6 hours, but maybe 8-12 to be safe) then shut down BOTH and transfer the files to the new one and make sure it's no longer setup as backup MX for those domains. I'd also change the address of the server to be the same as the old one so your clients dont need to change their email settings.
