8bpp isn't supported anymore since the MAME core now renders everything
with a minimum of 16bpp. We may eventually support some kind of
down-sampling for 8bpp displays, since there are people using workstations
that can't do more than 8bpp, but there hasn't yet been any work in this
area.

In theory it should work, but I haven't ever tried that. Have you
attempted to run it remotely without using Xvnc, by setting your DISPLAY
variable on the remote machine? You may need to run
xhost +<remote address>
to enable the remote host to connect.
