well,

I believe, your talking about the Custom label function feature of
jaws. to do this, place your cursor at the position where you want to
asign a custom label, & press insert f2, choose the the custom label
option & follow the onscreen instructions. in case you want to remove
an asigned custom label, there is a function for removing the custom
labels as well under the insert f2 menu. once a custom label is
asigned, jaws would completely bypass the underlying text & would read
only the asigned text unless it is removed.

also, it works only in html pages & nowhere else.
