Well, here's my findings.
I can only import AVI so the transcode wouldn't further downgrade the quality.
All other settings I tried to import DVD compliant MPEG2 file (m2v or m2p),
none will allow me to set "Don't Transcode".
If I specify "Automatic" settings, the final video is horrible especially
indoor footage. The Automatic settings uses only 1-pass encoding. I have to
setup several new presets with different data rate in 2-pass for better
quality. Now the video quality is more acceptable.
Still, the video looks "flat" and color is a bit faded compared to the DVD I
encode using Canopus Procoder.
So from what I learned,
1. Don't import MPEG-2 files to Encore that you can't specify "Don't
Transcode". Other, the additional transcoding will further degrade video
quality.
2. If you import AVI to Encore, don't use "Automatic" transcoding as it uses
1-pass encoding. Pick or create a different preset using VBR 2-pass encoding
for better quality.
