To answer the below question first, yes, I can confirm that your understanding is correct. But the human interactions that are referring to the other authentication flow are allowing the OAuth2 credentials to access your Google Ads account in the browser and setting manually the refresh token to your client library, not entering password. Also, since this is the account that x...@gmail.com that you login while configuring the service account, then to answer your question, this should be added to the test Google account that you want to access via Google Ads API.
