depends on the time of year too, the shells are thinner in the colder
months, i think its got to do with the feed changing from grain to silage
or something like that, a cook told me once, but i dont recall. boiling
eggs is a fighting matter, my mom and dad wont even discuss it anymore. im
of the bring it to a boil, drop cold eggs in gently with a spoon for 15
minutes, run under cold water in a colander, the shells pop right off, the
yolks are evenly firm, perfect for  devilled eggs. now if i were at my moms
and she walked in to me dropping eggs into boiling water, she would
literally kick me out of her house.
