Do you think this happens with Outbound messages too? I have some errors with our outbound mailbox as well.

This is more prone to occur on inbound messages. For example, if an inbound email is supposed to generate a new incident (or other application record) on submit to the Email Message form, and there is a required field value missing (or some other invalid value), the transaction will rollback and the email message will be deleted. In this case however, the error should still appear in the error log. You have to select "Yes" for the "Display Advanced Options:" on the Email Messages record then the [Error] tab will show. On the table field, the error from the Error Log will show.
