I don't think "golden ears" have much to do with detecting distortion.
It's more about being able to build a representation of the complete
sound stage (or whatever you'd like to call the image reconstructed in
our brain of the surrounding audible environment).

It's just like with vision. Some people in sports (ice hockey, for
example) can track their fellow players much better than I will ever be
able to do. And that is at the same time as dribbling with the puck.
