They probably mean 3 axes of gryos and 3 axes of accelerometers. So why did they leave out the 3 axis magnetometer?

With 3 accelerometer and 3 gyro axes they have enough to build an attitude indicator that will work in a flight vehicle. There are already lots of these around. Most of the sport aviation instruments use some other inputs as well to achieve satisfactory performance, GPS or air data being typical.
