If you're talking Wuxia, then Weapons of the Gods is pretty interesting (Eos Press). While it has some system problems, it has a lot of great ideas for doing high-fantasy martial arts. A little off- topic, but if you're looking for something with a lot of historical detail, there's Tibet the RPG. That's a strange beast, but might be useful for someone running a game in that period. I'd say L5R, while is does have some Chinese influences, is pretty deeply rooted in a fantasy-samurai setting. I think you'd have a harder time getting good straight Chinese stuff out of that. Gurps China I think you can find as a pdf from the Steve Jackson webstore. I'd also mention Mystic China from Palladium-- I suspect it is out of print, but I heard it had some good source material.
