The only way you can do it within BibDesk is by renaming the Url field  
to something else.  You'll lose some functionality by doing this (the  
Remote URL button in the editor), but it should be doable with  
AppleScript.  Take a look at the wiki 
http://bibdesk.sourceforge.net/wiki/index.php/BibDesk_Applescripts 
  for ideas.

should be fairly straightforward as well.
