We have several touring bikes with 65 mm SKS fenders with 26x50 mm
Schwalbe tyres, including Big Apples, and Shimano V brakes (LX and
XT). Unless your frame does not have the clearance (nearly all 26 inch
frames do), there should not be a problem with the 50 mm Big Apples
(measuring about 45 mm in reality). There simply is plenty of space,
including space for mud. This combination also leaves enough space for
the stays not to hit the sides of the tyre.
I also have one bike with 60 mm Big Apples and Shimano Deore V brakes.
There is clearly no space for fenders here. The brake/tyre combination
is fine, but not with fenders. The limiting factor is the horizontal
bit of brake cable above the tyre. That could be changed if you take
one of the cheap Shimano V brakes with special longer arms (you will
need to have a look at their catalogue). However, they are unlikely to
brake as well. Alternatively, you can buy the new intermediate size 55
mm Big Apple, that should fit with fenders on most frames.
Having said all that, I don't like the 60 mm Big Apple. I think it is
lumpy/mushy compared to the 50 mm that I like a lot. Unless most of
your riding is off road, I think the 50 mm is the far more enjoyable
tyre.
