The flavor of lamb is directly correlated with the production of lanolin. Finer wooled breeds like Merino, Rambouilett, etc. produce more lanolin and subsequently a stronger flavored meat. Coarser wool breeds produce less lanolin and milder flavored meat.
Hair breeds like Katahdin, St. Croix, BB, Dorper, etc. produce very little or no lanolin and have the mildest flavored meat.
