Paul, I use the control 8 all the time to delete mail without opening. You can also scroll to the "from" and "to" entries in the header and the control 8 still works.
If you want to delete an message you've already opened, what I do is to hit escape and when it says "move to which folder" I hit spacebar and the trash folder seems to be selected. Just press enter there and the message is moved to trash. If it isn't the first folder shown, just scroll through the folder list you'll get until you find it and then hit enter.
