Good idea. I usually keep it in a bottle with an airlock, so it can get rid
of any CO2 it might want to make.

It should be good for a week (or two). If you want to keep it longer, you
may need to feed it a bit. I seem to recall that you loose about 25% of the
live cells in a week, so if you have enough stuff, you can keep it for a few
weeks. Just wake it up with some food and warmth before you start using it.

If you do not happen to have sterile wort laying around, apple juice is a
good substitute for food, it has some sugars and other good stuff, and it
comes in pasteurized packages. Just check there is no chemicals, and be
careful to sanitize the outside of the packet.

Often I ferment a small experimental batch in a 5 liter bottle. If I reuse
that yeast, I just move the bottle into my fridge without further ado. Such
slurry has been the most effective starters I have ever used.

They aren't dead cells, for the most parts. Just sleeping (flocculating).
That is the way yeast behaves when it starts to run out of food, it collects
into clumps that settle to the bottom.

"Designing Great Beers" discusses the process with cell-counts and more
details than you ever want to know.

I am sure others will jump in to correct any mistakes I may have made, and
to share their experiences.
