I would put the bittering hops in the beginning, the finsihing hops 1-5 minutes before the end of the boil, and those in between, somewhere in between, say 15-30 minutes before the end of the boil. The earlier you stick them in, the more bitterness you extract from them, and the more hoppy aromatic oils have time to evaporate. > Pilsner har en EBU på 35, men den humle jeg har fået har et højere > syreindhold (Tettnang 7,4% og Mittelfruh 4,5%), hvis jeg bruger disse > mængder får jeg en EBU på 47, som vel er for meget. The good ones should show the bitterness contribution from each portion of hops. The bittering hops you should reduce in proportion to their strength (if you need 50g of 4%, you can use 25g of 8% or 27 g of 7.4 %). The middle hops you can do likewise, or reduce a bit less. The finishing hops won't give much to the bitterness, so the alpha-acid percentage won't matter. Keep them as they are. So much for theory. In practice, ask yourself if you like your beers bitter? if so, add back some of what you reduced. If not, reduce perhaps a bit more? Likewise for hop aromas. With a bit experience you can go from -50% to +100% on all of those, and get what you expect. For one of your first brews, I'd recommend staying withing +/- 25% (of the reduced values, that is). Remember, it will be a beer anyway, and probably a damn good one at that! Keep us posted. Meanwhile, have a merry Xmas (or what ever you celebrate these days, or at least a good long weekend). -H -- Heikki Levanto LSD - Levanto Software Development <[EMAIL PROTECTED]>
