To replace/add custom pkgs you can use the finalizer.  Here's my blog on

The answer to your other question reduced set of pkgs, you really need 
to elaborate on your requirements. What the are pkgs that you need at a 
minimum ? Do you need Gnome (you do if you plan to use the GUI 
installer).   If what you are looking for is a minimized opensolaris 
distro, look at milax. http://www.milax.org/

Here's a blurb from their web site.
