Well, in the case of how many punches and all that is pretty simple in the eyes of the law.
Our laws usually state that the act of striking somebody is assault and/or battery. There is typically an out for self-defense, however to qualify as self-defense there usually must be a continuing threat. Now every state will operate differently.
