Yes and no. Dhabihah (the Islamic laws of animal slaughter) are in some ways
more lenient than those of shechita (the Jewish laws of animal slaughter).
The former can be done by any adult Muslim while the latter can only be done
by a trained shochet (pious and learned individual knowledgeable in the
specifics of kosher shechita). One difference is that dhabihah requires a
specific benediction before slaughter, something not needed for shechita.
Past that I can't say as I don't know much about dhabihah other than what
I've seen.
For shechita there are a number of requirements past the trained shochet.
One is that the knife has to be as close to perfectly sharp as possible.
Even the slightest nick or dullness renders it useless. The way in which the
cut is made is very specific and must be one swift slice across the jugular
vein, carotid artery, esophagus and trachea. There are a number of specifics
such as pausing in the slice, sawing back, poking, etc. that are not
allowed. The goal is to subject the animal to as little suffering as
possible. After the cut the carcass is inspected for health and drained of
all blood. Certain fats and organs have to be removed as well as the sciatic
nerve.
Many Muslims will eat Kosher food because of the ritual observance can be
considered a prayer in itself.
