Thanks for the suggestion, but I think he'll stick with his Tarbais :)

Those Haricots Tarbais were organically grown by an heirloom legume farmer
in the Tarbais region of France, hand selected and hand harvested bean pod
by bean pod (the only way you can with Haricots Tarbais), then immediately
flown fresh to Atlanta where they were carefully shelled by hand.  That's
what made the finished weight of shelled beans so expensive.  That, and the
worldwide demand for them.  The dried beans are very good, but just not the
same as what can be achieved in experts' hands with fresh Tarbais.

Another great one is the dried Spanish Fabada bean, which is lovely when
soaked and cooked correctly.  You can get them dried for about $35 per
pound.  Great for making Portuguese bean stew with blood sausage and onions
(mmmmmmmm...).
