I totally understand what you mean. But I think that many cuisines are
adaptable in the hands of a skilled chef, so while I may not make it to
Piedmont any time soon, there is a place in town that specializes in cuisine
from the Piedmont region adapted to locally sourced ingredients. The same as
Piedmont in Piedmont? No, of course not. But then again, the Piedmont
restaurants in Piedmont don't have the same delicious ingredients we can
source locally here in the Northwest.

We are blessed to have so many wonderful food options and I'm all in favor
of celebrating them all. Especially when paired with good wine and beer :)
