It depends on whether the anonymizing proxy keeps access logs.
Also, many of these webmail facilities won't sign you up without an exchange
of cookies.
I don't exactly know what goes in these cookies, but I suspect that they may
include one's physical IP address.
Hushmail is the only webmail service I know of that doesn't stick you IP
address on messages sent.
