That depends. For a running application, you can set the application
image to anything that NSImage supports. For the icon when your app
isn't running, it needs to be a *.icns file. Fortunately, that format
supports multiple size representations of the icon in a single file
(essentially a MIP map), so, despite being a bitmap format, the sizes
can be tuned for specific sizes (512x512, 256x256, 128x128, 32x32 and
16x16).
