There are two things you can do: 1. you can cover the pan and cook the whole thing on low to medium low heat. The top of the omelet will get cooked; or you can cook it part way, until it begins to set around the edges, then broil it about six to eight inches away from the broiler coil until the top is done. Then you can slide it onto a plate. If you want to make it into a sandwich, I would toast the bread separately, then place the cooked omelet on the bread. If you want to you can then put the sandwich back into the pan to heat it through.
