I use Bob's Red Mill one-to-one flour.
One of the items recommended to use for rising assistance is psyllium husk. 
I am still a want-to-be GF baker. I made carrot muffins and they held
together very well for the first time. The consistency was very dense.
Haven't mastered the light and fluffy which my husband likes. My muffins
have wonderful flavor minus the densness.
