On aircraft that are fairly new, with the fancy glass cockpits (starting in the 757, 767 time frame and including 737 that are newer) the FE has been supplanted by a computer and a slightly busier FO. However, there are still quite a few older DCs and Boeings flying on charter, cargo, and smaller scheduled airlines that have someone in the 3rd seat. It will probably be that way for some time. In my brother-in-law's case, he serves as both Flight Engineer and traveling A&P/IA.
