Also all I want it to do is access a single Maildir directory and let me
access it via IMAP. The documentation seems surprisingly sparse, am I
missing somethign obvious here? I can't even find where it tells me
where to set up a new account.

You will not find any IMAP server in the world that tells you how to do that.

That's because IMAP has nothing to do with creating accounts. IMAP is a protocol (that's what the last letter, "P" means) for a client to access mail from the server. Mail account creation, administration, and maintenance, is not a part of the protocol.

I understand how IMAP and SMTP work but while IMAP, the protocol, has nothing to do with creating accounts, an IMAP server most certainly should be able to check some repository of account information, which Courier-IMAP obviously does.

Correct. But that wasn't your question.
