You will not find any IMAP server in the world that tells you how to do that.
That's because IMAP has nothing to do with creating accounts. IMAP is a protocol (that's what the last letter, "P" means) for a client to access mail from the server. Mail account creation, administration, and maintenance, is not a part of the protocol.
Before you installed courier-imap, you must have installed courier-authlib, because without it courier-imap wouldn't install. You will find some documentation regarding account maintenance in courier-authlib's various README files.
