That sounds like a good track. I think you can go with that latter plan, but feel good about yourself simply by being honest about your intentions.
You don't have a business yet, but maybe you'd like to one day. That's the truth. Be real and people will respond to that. Also: lots of potential coworkers are shy too. Maybe a majority. So that can be a good thing!
