You mean the ICC Epson themselves supply?

Assuming you're using ICC profiles not specifically generated for
Gutenprint, this is totally expected...
Each profile is specifically for a Printer + Ink + Paper + Driver +
DriverSettings combination, if any one of those changes, the profile is
invalid.

It has nothing inherently to do with good or bad... It's simply not
drop-for-drop identical with Epson's own proprietary printer driver.
So maybe I need to create my own printer/paper profile?

Yep.

A ColorMunki _Photo_ can do printer profiles (not the other cheaper ones),
since it's a spectrophotometer with a lightsource. It's not cheap, but
considering the cost of an Epson 3880 it seems like a no-brainer.
I had very good succes making profiles for a cheap HP Photosmart C6280
using the Munki (and Argyll), however with Gutenprint my results haven't
been as good... But, currently trying to figure out what the most
convenient way is to profile gutenprint.
I haven't been able to invest as much time into this as I'd wanted, but if
you're patient I _might_ be able to give some more sensible tips in a month
or so (I hope).
