I never shoot in jpeg, but because of the colour matching problems I've
been having, I'm going to have to shoot in raw+jpeg for these shoots
because it's the only way to know what colour the camera thinks is there.

As for the colour profile, on Canon, they have several different types of
colour styles, the Faithful style is supposed to match colours exactly when
white balance is set to sunlight.  I've been able to upload custom colour
styles to the camera, and apparently it's possible to download the colour
profiles from the camera too.
