Yes this is how to do it.  I would select one or two albums first for
you to get a feel of how it works.  You have to select the option gary
says to get album gain values right.

Once you've done this, you'd need to rescan. SB would read these values
and ignore itunes values.  This would solve your SB volume issues.  

If you've used mp3tag you can use it to convert your replaygain values
into soundcheck values.  You make it use the albumgain value.  Itunes
would then use these soundcheck values which would sort out your
problem in itunes.  If itunes could have just used and honoured the
replaygain tags everyone else is using life would have been a lot
simpler...
