After a few days where squeezecentre hasn't 'seen' the Touch on the network, as soon as I slotted in the SD card we were up and running again with the Touch happy to connect to the NAS and Squeezecentre seeing it as a player.
I'm going to leave 'settings' pretty much much alone now before desicing whether to update the server s/w.
