You really don't have to use iTunes on most iPods ... Rockbox installs easily and straighforwardly on iPods (although not all - yet!) ..the two key attributes being: (a) your iPod is just treated as another USB device, so you can use whichever music management system you like, just copying files directly to the iPod as to any disk, and (b) all the Itunes procilivity to mess with your music files or tags are avoided.
