Mike Jackson here developed a set of scripts that capture the history of your bash screen and publishes it on a web site so that students/helpers have a chance to see what they missed while resolving a problem and now has scrolled off the screen. It's not ideal but it
does provide students with a chance of recapping what they missed. I
have not used the scripts but it is something to consider.

You can do what you do and give even more detail or more anecdotes or take more pauses, making sure that there are no red postit notes flagging issues. Whatever strategy one takes it's going to annoy someone so I am not sure there is a single answer to your question.
