I've never owned a laptop so I can't help you too much on
the hardware side, although I would probably go for an AMD mobile
Athlon...
As far as the soundcard's concerned though, you could
always go for an RME DSP card which will give you near 0 latency and is an all
round
wicked card...

If I was to get a laptop, what would be the
best soundcard to get for it? I'll just be using software - so I'll need low
latency most importantly. Is the new SB Audigy any good? Also, what would be
the best type of processor - AMD or Pentium?
