I just use the built-in AC97 sound of the main board.  There are likely
better choices but this works for me with WSJT-X.

You should be able to install the pavucontrol package which does work
with PipeWire.  It is a GTK program that will allow you to set which
sound adapter any given program should use.  These settings are
remembered between sessions along with recording a playback audio levels
that are set.

There are other utilities that allow setting the default audio device.
For example, this desktop had three possible outputs, HDMI, AC97, and a
set of USB speakers.  It wanted to have the HDMI be the default but I've
only computer monitors with no speakers on those ports so I disabled the
HDMI and set the USB speakers as default.  Then I use pavucontrol to
direct WSJT-X, Fldigi, the play and rec programs from Sox (for use with
the Tlf logger) to the AC97 adapter which is connected to the K3.

I've been running this setup since 2018 on Debian, currently running
Debian 12.  I can play a video/audio which is heard through the USB
speakers while WSJT-X is doing its thing.
