My current MUA (Apple Mail.app) only has two date options: Sent and
Received.

Sent is from the sending client, while Received is the timestamp whe the
email arrives at my POP/IMAP server's Inbox.

IMHO the "Sent" date is completely unneccessary - either the sender's
clock is wrong (unintended or deliberately forged (SPAM)) or it's only a
few seconds before the "Received" date anyway.

But there's a third date timestamp I'd be much more interested in than
Sent: the Fetched date. This is the timestamp when my MUA fetches this
email the first time.

Knowing the fetched date might indeed be useful, although I still find the sent date to be very useful.

Use Case for knowing the sent date: As I'm on a lot of mailing lists, it's quite often useful to refer to previous messages by linking to that message in the archive. Unfortunatley, not all list servers insert the Archived-At header, linking to the messages location on the archive server, and so the only way to find it is to go through the archives and look for it around the date/time it was sent to the list. Since the fetched date can potentially differ from the sent date by quite a while (especially if I go away on holidays and don't check mail for a few days or weeks), knowing the sent date is vital for this.

Use case for knowing the fetch date: I would like to have a way to view the most recently received mails, regardless of which folder they're in. The sent date for this may not be so useful, as their could be significant delays between the sent date and the fetch date.

This could, for example, be some kind of smart folder. This would be useful as a way to get a quick overview of which mails were just fetched, allowing me to immediately deal with the important ones without having to manually check several individual folders.

While Growl notifications would also help with this a little, that's not ideal because I may miss the growl notification when I'm away from my computer, or be busy with something else and choose to ignore it at the time. So having a clear list of recently received mails would help me see them when I'm ready to.
