The original intent of email was written for green screens when 16K was an
ASTOUNDING AMOUNT OF RAM!

Can OS X be run on such a machine? Of course not. This makes the
comparison somewhat disingenuous.
Can defaulting to plain text for new messages still be the correct
choice? I certainly think so.
