Perfect example; removing meta-data willy-nilly can be quite rude.

If Mail.app behaved better and its "Use the same message format as the original 
message" worked properly all the time, I'd use it.

(Yes, I had to change prefs just to reply to this email).

That does bring up a suggestion though. Even when viewing in 'plain text' it 
might be useful if that 'plain text' somehow preserved <strong> <em> <b> and 
<i> tags for displaying?
